The Enchanted Cat Old Tom Gin

Old Tom gin came about in 18th century England as a way around the rising alcohol taxes that sent distillers underground. Distillers would put a carving of a cat on their front door (the Enchanted Cat) and you could put a coin in its mouth and be rewarded with a shot of sly gin. This is a slightly sweeter and richer gin thanks to a touch of liquorice root, hints of star anise and cloves.
